As a longstanding customer and confirmed groupie of Professor Lior Lev Sercarz, the ‘spice-subspecialist’, my palate and nose have been treated to a voyage deep into the spice jungle (Earth) of abundance. Lior’s La Boite has been the catalyst for opening pathways of culinary granularity that I never knew existed. Between the tongue and the nose, the latter being equivalent to a ‘gas chromatograph’ with the capabity of perceiving an incomprehensible number of distinctive tastes, aromas, and experiences making La Boite the veritable ‘spice renaissance’ for those willing to take the ‘journey’ like no other in the culinary world. Without equivocation, Lior is the world’s leading authority upon spice and the process of blending them to what I can only describe as a confluence of convergent surprises.
