A unique olive oil pressed from olives harvested at night. 

This special and limited oil is produced in exceedingly small quantities due to the labor involved. Olives are harvested at nighttime and the oil is pressed immediately, resulting in an even lower level of acidity. Ptora was established by the Tamir family under the guidance of olive oil expert, Ido Tamir. Their olives are grown in the Lakhish region, which is known for its unique terroir.

PICUAL - A touch of sweetness with a peppery undertone and buttery taste

PICHOLINE -  Very spicy, punctuated by an aroma of wild yellow mustard flowers

CORATINA - Intense with a delicate spice and a hint of bitterness

    Rich, deep, intense!

    The production method of the Ptora Midnight Picholine is as magical as the flavor of this deep, silky, peppery oil. Perfect for salad dressings and drizzling on roasted vegetables or fish. It has the right balance for an olive oil cake studded with pine nuts, citrus, and figs - a few grinds of La Boîte’s toasted Telicherry Black Pepper and Cancale, a fleur de sel based spice blend with orange peel and fennel hits all the right notes.
