Burrata, Tomato & Olive Salad

Ingredients
- 1 pint cherry tomatoes, cut in half
- ½ cup pitted olives, cut in half
- ¼ cup chopped scallions
- ¼ cup mint leaves
- 2 Tbsp olive oil
- 1 tsp fleur de sel
- Peperoncino to taste
- Juice of half a lemon
- -
- 1 or 2 burrata balls (1 pound)
- 2 Tbsp olive oil
- 1 tsp fleur de sel
Directions
- Toss the tomatoes, olives, scallions, and mint with the lemon juice, olive oil, salt and some peperoncino flakes.
- Toss to combine.
- Transfer the seasoned salad to a serving bowl.
- Top with the burrata and drizzle with olive oil and fleur de sel.
- Enjoy.
