Everything Indian Cottage Cheese Bagel Bites

Ingredients
- 1 cup spelt flour (or all-purpose flour)
- 1 ½ tsp baking powder
- ½ tsp sea salt
- 1 cup cottage cheese
- 1 egg
- 2-3 Tbsp Everything Indian blend
Directions
- Preheat the oven to 375F.
- Add the flour, baking powder, and salt to a bowl and mix well.
- Add in the cottage cheese and begin to mix with a fork or a wooden spoon eventually going on with your hands to create a dough.
- Prepare an oven proof sheet pan with parchment paper or spray with oil. Roll the dough into 1.5 inch diameter balls and place on the sheet pan.
- Prepare the egg wash by lightly whisking the egg in a bowl. Brush the egg wash onto the bagel bites and gently roll them in the everything Indian spice blend on a small plate.
- Place back onto the baking sheet and bake for 14 minutes. Remove the bites from the oven and allow them to cool for 10 minutes.
- Enjoy with cream cheese and (optional but so good!) a dollop of your favorite Indian pickle like lemon or mango.
- They are best enjoyed fresh but will keep in an airtight container in the fridge for 3 days.
- Just reheat in the oven or microwave for a few seconds before enjoying them from the fridge.
