Part of the classic items in a salatim spread, Matbucha is a jammy tomato condiment of tomatoes cooked down with garlic and a little Izak.  Use it as a dip, a spread, or even a shakshuka starter.

Ingredients

  • 2 Tbsp olive oil
  • 2 14oz cans of diced tomatoes
  • 2 cloves garlic, sliced thinly or 1 Tbsp dried garlic slices
  • 2 Tbsp Izak
  • 1 tsp fine sea salt

Directions

  1. In a heavy bottom skillet, add the ingredients and simmer until thickened and jammy.
  2. Enjoy warm or refrigerate for the rest of the week.
