Grilled asparagus is a crowd favorite that only gets better with OMG vinaigrette.
1 bunch asparagus, cleaned and trimmed
1 Tbsp vegetable oil
Salt to taste
Pepper to taste
¼ cup OMG vinaigrette
Preheat the grill on high heat. You will need a nice hot spot for the asparagus to cook quickly.
On a tray or flat plate, drizzle the asparagus with oil, salt and pepper to taste, tossing to coat and season well.
On the hot grill, grill asparagus until just al dente.
Remove the asparagus to a clean platter and drizzle on the OMG vinaigrette.
The asparagus will continue cooking even after you take it off the grill so cooking it just to al dente will help keep it from getting overcooked.
The asparagus can be prepared the same way on a tray in a 400F oven instead of grilling.
Make sure to take out your OMG vinaigrette from the fridge 15 minutes or so before you need it and give it a good stir in case it's solid cold.
If you have some grated parmesan or pecorino sprinkle some on top for a nutty, cheesy finish.
If asparagus is not in season yet you can drizzle the OMG vinaigrette on green beans, roasted beets, and lacinato kale, the options are endless.
