Easy grilled peach salad with peppery arugula, creamy feta, and some fresh herbs are a great appetizer or entrée. Make this for yourself or as a big platter for a group and enjoy!
Ingredients
2 peaches, cut in half and pits removed
¼ cup feta
¼ cup fresh mint leaves, roughly chopped
3 cups arugula

¼ cup Riviera Vinaigrette
Oil or nonstick spray for grilling peaches

Pepper to taste

Salt to taste
Directions
Preheat the grill to high heat.
Lightly oil or spray the cut face of each peach half and place on the hottest spot on the grill.
Remove the cooked peaches gently once nicely grilled and just warming through.
Onto your serving plate, arrange the arugula salad with peaches on top.
Crumble the feta over the salad and sprinkle on the mint.
Drizzle the peaches and salad with Riviera Vinaigrette.
Season with salt and pepper to taste.

Recipe Notes
The best peaches to use are just barely ripe.
Mint can be substituted by parsley, cilantro, basil, or a mixture of your preferred fresh herbs.
Variations and Ideas
If peaches are not available try grilled or fresh tomatoes, watermelon, or shrimp.
Instead of grilling, the peaches can also be seared in a hot pan. The procedures will be the same.
