Ingredients
- 2 cups cooked broccoli (steamed or blanched)
- 1 cup cooked peas (defrosted frozen peas are ok too)
- 1 cup cucumber sliced ¼” and cut into quarters
- ¼ cup thinly sliced scallion
- ¼ toasted sesame seeds
- 1 tsp fine sea salt
- 1 pound fresh lo mein noodles, cooked to package directions (see Recipe Notes) and chilled in running water.

- ½ cup tahini
- 2 Tbsp soy sauce or gluten free tamari
- ¼ cup mirin (or sake, or xiaoxing wine)
- 2 Tbsp sugar
- 2 Tbsp miso
- ½ tsp fine sea salt
- 2 Tbsp toasted sesamed seeds
- 2 Tbsp white vinegar
- ½ cup water
Directions
- In a large mixing bowl, toss the noodles and vegetables with the sesame dressing and enjoy right away. Try to dress the noodles right before serving.
