Ingredients
- 2 medium eggplants, diced
- 2 Tbsp Shawarma West
- 1/4 cup olive oil
- 1/4 cup honey
- 1 Tbsp sherry vinegar
- Salt
Directions
- Preheat the oven to 375 degrees.
- Toss the eggplant with all other ingredients. Place in a roasting pan and cook for about 20 minutes.
- Enjoy.
