Cumin and Honey Roasted Eggplant

Ingredients

  • 2 medium eggplants, diced
  • 2 Tbsp Shawarma West
  • 1/4 cup olive oil
  • 1/4 cup honey
  • 1 Tbsp sherry vinegar
  • Salt

Directions

  1. Preheat the oven to 375 degrees.
  2. Toss the eggplant with all other ingredients. Place in a roasting pan and cook for about 20 minutes.
  3. Enjoy.
