2 medium eggplants, diced

1/4 cup olive oil

1/4 cup honey

1 Tbsp sherry vinegar

Salt
Directions
Preheat the oven to 375 degrees.
Toss the eggplant with all other ingredients. Place in a roasting pan and cook for about 20 minutes.
