Spring Tonic
I infuse Old Tom gin with our Curcumade blend to add earthiness and a subtle spice, then combine it with tonic and Kumquat Compote for a refreshing cocktail that's still perfect for a cooler day.

Ingredients
- 2 tsp Kumquat Compote
- 2 ounces of Old Tom gin*
- Pinch of Curcumade
- Tonic and/or seltzer (if you prefer a drier drink)
Directions
- In a 12 ounce Collins glass, add the Kumquat Compote and fill with ice.
- Add the gin and curcumade to a cocktail shaker filled with ice. Shake until cold and strain into the Collins glass.
- Add tonic and/or seltzer to fill, add a straw, then give the drink a single sharp stir with the straw to mix. The kumquats at the bottom are a nice treat at the end so I like serving this with a spoon straw to make them easier to eat.
