Directions

1. Preheat oven to 425°F

2. Mix smoked chili flakes, wild oregano, thyme flowers, pimenton, and smoked pepper in a small bowl.

3. Chop parsley and guindilla peppers and set aside.

4. Arrange feta and tomatoes in cast iron skillet and drizzle with 1 tablespoon of olive oil. Lightly salt tomatoes.

5. Sprinkle spice mixture over feta and tomatoes. Then, sprinkle the guindilla peppers and parsley pepper mixture over feta and tomatoes.

6. Bake for 15 minutes or until cheese is starting to soften and melt.

7. Remove from oven and drizzle with remaining 1 tablespoon of olive oil. Let cool slightly before serving warm at the table with bread or crackers.
