Baked Feta with Tomatoes

Ingredients
- 1 block feta cheese
- 2 handfuls cherry tomatoes
- 2 tablespoons olive oil
- 1 pinch fresh chopped parsley
- 6 guindilla peppers
- 1 teaspoon smoked chili flakes
- 1/2 teaspoon wild oregano
- 1/2 teaspoon thyme flowers
- 1/2 teaspoon smoked black pepper
- 1/2 teaspoon pimenton
Directions
- Preheat oven to 425°F
- Mix smoked chili flakes, wild oregano, thyme flowers, pimenton, and smoked pepper in a small bowl.
- Chop parsley and guindilla peppers and set aside.
- Arrange feta and tomatoes in cast iron skillet and drizzle with 1 tablespoon of olive oil. Lightly salt tomatoes.
- Sprinkle spice mixture over feta and tomatoes. Then, sprinkle the guindilla peppers and parsley pepper mixture over feta and tomatoes.
- Bake for 15 minutes or until cheese is starting to soften and melt.
- Remove from oven and drizzle with remaining 1 tablespoon of olive oil. Let cool slightly before serving warm at the table with bread or crackers.
