I love making quick and simple tartines that are a fancy name for an open faced sandwich. The particular one makes a great breakfast dish or snack any time of day. You can use homemade hummus or a great store bought one. What really takes it to the next level are the preserved lemon slices.
Hummus and Preserved Lemon Tartine

Ingredients

4 slices of sourdough bread (or your favorite bread)

1/2 cup hummus
-
Tunisian preserved lemons
-
1/4 cup chopped scallions
-
Salt
Directions
Spread the hummus over the bread slices (you can toast the bread if you like).
Top it with slices of preserved lemon, chopped scallion and some of the oil from the lemon jar. Season to taste with salt. Enjoy

Variations & Ideas
• Replace the hummus with labne or smashed avocado.
• Replace the bread with hot tortillas for a middle eastern taco.
