Masala Queso: A Spiced-Up Twist on Creamy Texas Cheese Dip

Ingredients
- 2 Tbsp olive oil
- 1 Tbsp butter
- ½ yellow onion, diced
- 3 cloves of garlic, minced
- ½ jalapeño, minced
- ½ a ripe, chopped ½” dice
- 1 heaped Tbsp corn starch
- 1 heaped tsp Everyday Masala blend
- 1 ½ cups whole milk
- 4 ounces cheddar cheese, grated or cubed
- 4 ounces pepper jack cheese, grated or cubed
- Salt to taste
- Freshly chopped cilantro for garnish
Directions
- Heat the olive oil and butter in a pan over medium heat until shimmering.
- Add the diced onion and sauté for 3 minutes until translucent.
- Stir in the garlic and jalapeño, sauté for another minute.
- Add the chopped tomato and cook for 3 minutes until softened.
- Sprinkle the cornstarch over the mixture and cook for another minute, stirring well.
- Add the Everyday Masala spice blend and mix to combine the flavors.
- Slowly pour in the milk, about 1/4 cup at a time, whisking to create a smooth sauce.
- Add the grated cheeses, stirring constantly over medium-low heat until melted and smooth.
- Season with salt to taste.
- Transfer to a serving bowl, garnish with fresh cilantro, and serve hot with tortilla chips.
