Savory Squash Pie

Ingredients
- 1 butternut squash, peeled and thinly sliced
- 2 zucchinis (green or yellow or one each)
- 1 onion, peeled and thinly sliced
- 2 tablespoons Mousa spice
- Olive oil
- Salt
- Peperoncino
Directions
- Preheat the oven to 375 degrees.
- Place the sliced butternut squash, sliced onion and sliced zucchini each in a separate bowl. Toss them with some olive oil, salt, peperoncino and Mousa spice.
- Coat a 9 inch round baking dish with some olive oil. Place some sliced zucchini in the center in a flower pattern. Continue with sliced squash around to cover the bottom. Place some sliced onions on top and continue with the same layers until you have used all the vegetables.
- Cover with foil and bake for 20 minutes. Remove the foil and cook for another 20 minutes until the pie is cooked. You you should be able to enter a sharp knife top to bottom very easily.
- Remove from the oven and place a platter or plate on top of the dish. After about 5 minutes carefully flip the the dish and serve. Enjoy
