Not sure if this is a pie or something else entirely, but what matters is that it tastes great and is simple to make. You can serve is as a side or main course, and it reheats easily.

Savory Squash Pie

Ingredients

  • 1 butternut squash, peeled and thinly sliced
  • 2 zucchinis (green or yellow or one each)
  • 1 onion, peeled and thinly sliced
  • 2 tablespoons Mousa spice
  • Olive oil
  • Salt
  • Peperoncino

Directions

  1. Preheat the oven to 375 degrees.
  2. Place the sliced butternut squash, sliced onion and sliced zucchini each in a separate bowl. Toss them with some olive oil, salt, peperoncino and Mousa spice.
  3. Coat a 9 inch round baking dish with some olive oil. Place some sliced zucchini in the center in a flower pattern. Continue with sliced squash around to cover the bottom. Place some sliced onions on top and continue with the same layers until you have used all the vegetables.
  4. Cover with foil and bake for 20 minutes. Remove the foil and cook for another 20 minutes until the pie is cooked. You you should be able to enter a sharp knife top to bottom very easily.
  5. Remove from the oven and place a platter or plate on top of the dish. After about 5 minutes carefully flip the the dish and serve. Enjoy
