Mediterranean Lemon Whole Roasted Chicken

Ingredients
- 3–4-pound whole chicken
- 2 Tbsp Mediterranean Lemon spice
- 1 lemon
- 2 onions
- 2 shallots
- 2 stalks celery
- Kosher salt
- Black pepper
Directions
- Preheat oven to 425 degrees
- Cut 1 onion, shallots, and celery medium dice, mix and place in the bottom of roasting pan for the chicken to cook on.
- Cut lemon and the other onion into pieces small enough to fit into the chicken
- Season the entire chicken generously with Mediterranean Lemon, salt, and black pepper (including the cavity)
- Add the lemon and onion to the chicken and place it on top of the vegetables in the roasting pan
- Roast for 1 hour
- Allow to rest for 15 minutes, then carve and serve
