Chef Paul Kahan has received national acclaim, including a James Beard award, as the chef and partner for avec, The Publican, and Publican Quality Meats, to name a few. He began cooking in kitchens in Chicago and opened his own restaurant, Blackbird, in 1997. He is dedicated to seasonal cooking and is constantly raising the bar for classical cuisine with his creative ideas.
Lior and Paul met 10 years ago and bonded over their love of food and spices. Together, they created three custom spice blends for Paul and his restaurants: avec, the Publican, and PK.
