Our nutty Iris blend is perfect for this brussels sprouts dish. Each brussels sprout half gets caramelized on the cut side with a crispy crust of Manchego cheese around the edges for even more nutty flavor. It’s so satisfying to make and the less you touch it the better it comes out.
Crispy Caramelized Brussels Sprouts with Manchego Cheese

Ingredients
- 2 Tbsp olive oil

1 tsp fine sea salt
- 1 pound Brussels sprouts, cut in half
- ¼” manchego cheese, finely grated

2 Tbsp Iris blend
Directions
- Preheat the oven to 400°F.
- In a large oven safe pan, large enough to fit the brussels sprouts in a single layer, heat the olive oil over medium high heat.
- Sprinkle the salt evenly over the pan and place all the brussels sprouts into the pan, cut face down,
- Evenly sprinkle on the manchego cheese, making sure to get the cheese all the way to the edges so they can become crispy and caramelized.
- Sprinkle on the Iris blend on top.
- Continue cooking the brussels sprouts on the stove until they become golden brown on the cut side.
- Transfer the pan to the oven to continue cooking until the brussels sprouts are tender, the cheese is golden brown, and the edges are crisp.
