The tongue-numbing, citrus-scented berry of a Chinese prickly ash tree.

Sichuan pepper is not related to your standard black pepper. It's floral, warm, and citrus aroma is what you notice first. The heat and tongue-numbing quality comes after. Sichuan pepper pairs well with ginger, citrus, and cinnamon.

Better than I remember . . .

Used to buy these from bulk bins at the Asian market, back in the day. Probably not the freshest, and I hadn't replaced them in years. Time for fresh - the Sichuan peppercorns from La Boite are delightful- floral almost. My husband came back for a second sniff when I asked him to smell the opened jar. "Wow, you find the most interesting stuff . . ."
