For Adam Quirk of Cardinal Spirits, infusing began as a hobby, where he would experiment with spices and fruits, etc. Inspired by the opening of Breuckelen Distilling in his Brooklyn neighborhood, Adam became more interested in pursuing distilling as a full time job.
He opened Cardinal Spirits in 2015, after having to get a law created in Indiana to allow for craft distilling. Him and his business partners opened Cardinal Spirits with the goal of distilling all of their own spirits with natural flavors and absolutely no shortcuts, never sacrificing quality. In keeping with Adams original spirit, Cardinal is rooted in experimentation, which allows them to make distinctive products that tell a story.
This lead to La Boite and Cardinal Spirits collaborating on two very unique products. The first is Terra gin, created with a La Boite spice blend of wild Israeli mint, called Zuta, and cubeb berries from Indonesia. The second is La Boite American Amaro. After working on it for two years, the amaro is exactly what Lior and Adam envisioned: an amaro meant to sipped during a meal and paired with food.
