One of my favorite simple summer cocktails is a Pimm's cup. This version uses our La Boite Amaro to highlight the beauty and range of amaro's like ours to make refreshing cocktails in addition to after dinner digestives. I prefer mine on the less sweet side with soda water but I kept the ginger ale (or lemon lime soda) for the classic. Either way, make sure to cut up you cucumbers into cubes and freeze them to use as the ice so you can sip a tall drink without watering it down.

Ingredients
- 1 Persian cucumber, split in half lengthwise and cut into1” pieces then frozen

2 ounces La Boite Amaro

½ ounces lemon juice
- Ginger ale (or club soda)
- Lemon wedge
Directions
In a tall glass, add the frozen cucumber “ice cubes” and add the amaro and lemon juice. Top with ginger ale and a fresh lemon wedge and enjoy the weather.
