Rosemary and Lemon Roasted Chicken

There could never be enough chicken recipes. This might be one of the easiest ones to make, but is so satisfying you will make it over and over again. The Ayala spice has both salt and pepper as well as garlic, which makes it a great all in one spice blend.

Ingredients

6 chicken thighs (bone in and skin on)

1 lemon, cut in 6 wedges

1 red onion, cut in 6 wedges

Ayala spice
Directions
Preheat the oven to 375 degrees.
Season the chicken with Ayala spice on both sides and place it in a roasting pan or baking tray.
Place the red onion and lemon wedges around and roast for about 35 to 45 minutes until the chicken is cooked.
If you are looking for a crispy skin place the pan under the broiler for 3 to 4 minutes for an extra char and crunch. Enjoy.
Recipe Note
Variations & Ideas:
- Add a layer of thinly sliced potatoes under the chicken for a one pan meal.
- Once the chicken has cooled down a bit, remove it from the bone and mix it with the diced crunchy skin to make perfect chicken tacos.
