Rosemary Smashed Potatoes
This is one of my go to side dishes that never fails and is a crowd pleaser. It can be prepared in advance and paired with a protein or a salad.

Ingredients
- 1 pound butter ball or small potatoes
- Ayala spice
- Grated Parmesan
- Olive oil
- 1/4 cup chopped scallions
- Salt
Directions
- Place the potatoes in a pot and cover with cold water. Add one tablespoon of salt and bring to a simmer. Cook for about 15 minutes, until the potatoes are tender but not falling apart.
- Drain the hot water and place the ptatoes on a plate. Using the bottom of a glass gently smash the ptatoes to form a flat circle and place them on a roasting pan lighlt coated with olive oil.
- Season the smashed potatoes with Ayala spice, a drizzle of olive oil, and grated parmesan and bake at 450 degrees for about 5 to 8 minutes. Enjoy.
