This is one of my go to side dishes that never fails and is a crowd pleaser. It can be prepared in advance and paired with a protein or a salad.
Place the potatoes in a pot and cover with cold water. Add one tablespoon of salt and bring to a simmer. Cook for about 15 minutes, until the potatoes are tender but not falling apart.
Drain the hot water and place the ptatoes on a plate. Using the bottom of a glass gently smash the ptatoes to form a flat circle and place them on a roasting pan lighlt coated with olive oil.
Season the smashed potatoes with Ayala spice, a drizzle of olive oil, and grated parmesan and bake at 450 degrees for about 5 to 8 minutes. Enjoy.
- Mix the grated parmesan with bread crumbs and granulated garlic.
- Fry the smashed potatoes in a fryer or pan with oil and toss them with grated parmesan as they come out of the fryer.
