Ingredients
Daisy Spice Blend

3/4 cup/ 15 grams chamomile flowers, ground

1 pod/2 grams vanilla bean, chopped and ground

2 teaspoons/2 grams pink pepperberries, ground

Scant 3/4 teaspoon/2 grams ground sumac

Mix all ingredients well, store in an airtight container.
Daisy Syrup
-
1/2 cup water
-
1/2 cup granulated sugar

1/4 cup orange blossom honey
-
1/4 cup grenadine
-
1/4 cup Daisy spice blend (see above)

Combine all ingredients in a saucepot over medium heat and cook, stirring occasionally, for 10 minutes. Do not boil. Fine strain and bottle.
Marguerite Cocktail

2 ounces Terra gin*
-
1 ounce fresh lemon juice
-
1/2 ounce Daisy syrup (see above)

Seltzer water
-
Suggested garnish: mint sprig and small daisy flower
Directions
Combine the spirit, juice and syrup with ice in a shaker. Shake and strain into a julep cup or small tumbler filled with cracked ice. Top with seltzer and garnish. Serve with a straw.

*Terra gin is currently available in Indiana, in New York State, which will ship to many other states. If you can't find it locally try substituting: a non-traditional gin like Botanivore from St. George, a low juniper variety like Citadelle, or for a twist, a resinous Spanish gin like Xoriguer from Mahon.
Variations & Ideas:
Make it a flip. Add 1 whole pasteurized egg or 3 tablespoons of aquafaba to the shaker along with a dash of bitters (try celery) and another teaspoon of Daisy syrup, shake until well chilled, then strain into a chilled tumbler glass.
