I mixed with shallots, cilantro, green chili (or serrano), and then our Everyday Masala blend. This blend contains the four key Indian spices: cumin, coriander, turmeric, and chili. They are revered in ancient Ayurveda for their health-enhancing properties not to mention – mega flavor!

Ingredients
- 2 cups shredded cheese like cheddar or your favorite vegan cheese
- 1 shallot, minced
- ¼ cup chopped fresh cilantro
- ¼ Serrano chili, sliced (optional for extra heat)

1 Tbsp Everyday Masala

½ tsp fine sea salt

8 slices multigrain or whole wheat bread
- 4 Tbsp butter or vegan butter
Directions
Mix the cheese with the shallot, cilantro, chili (if using), and the Everyday Masala blend.
- Place a handful of cheese or two onto a slice of bread. Top with a second slice.
- Melt a tablespoon of butter in a skillet on medium high heat.
- Place your sandwich in the melted butter and place a heavy lid on top to ensure the cheese melts and the bread becomes a crunchy golden brown for about 2 minutes.
- Flip the sandwich, cover with a lid and reduce to a medium flame for another 2 minutes. This will help the cheese melt without burning the bread.
Transfer to a plate or cutting board. Slice in half crosswise and enjoy right away!
