Stone fruit season is one of my favorites. Aside from savoring the fruit as is, it offers great possibilities for cooked or raw dishes. This one is a quick simple salad and you can add your own twist with herbs, nuts and so much more. Try also grilling the fruit before making this salad.
Toss the apricot, peach and cherries with some olive oil, salt, Shabazi spice and lemon juice. Place on a plate and top with the crumbled goat cheese.
• add toasted pistachios or almonds.
• Quickly sauté this salad without the cheese in a hot pan and drizzle with some hot sauce to serve as a side dish for grilled meats.
