Stone Fruit and Goat Cheese Salad

Stone fruit season is one of my favorites. Aside from savoring the fruit as is, it offers great possibilities for cooked or raw dishes. This one is a quick simple salad and you can add your own twist with herbs, nuts and so much more. Try also grilling the fruit before making this salad.

Ingredients

2 peaches, pit removed and cut in wedges

4 apricots, pit removed and cut in half

1 cup cherries, pit removed and cut in half

1/4 cup crumbled goat cheese
For the Dressing
-
2 tsp Shabazi blend
-
1 Tbsp freshly squeezed lemon juice
-
2 Tbsp olive oil
-
2 Tbsp honey
-
1/8 tsp fine sea salt
Directions
Arrange the fruit onto a serving platter.
Crumble the goat cheese over the fruit.
Stir the dressing ingredients together to combine well and drizzle over the platter of fresh fruit and crumbled goat cheese.
Enjoy!
