There are so many ways to enjoy watermelon.  In big juicy wedges, cut up into a fruit salad, and diced into a refreshing sweet-savory salad full of fresh herbs.  But having the right vinaigrette....makes all the difference.  This makrut lime dressing is going to wow your friends.  Add a few slices of paper thin jalapeño to finish the salad if you like the extra kick.

Watermelon, Cucumber and Mint Salad with Lime Leaf Vinaigrette

Ingredients

  • 4 cups watermelon, diced 1”
  • 2 Persian cucumbers, split and cut into 1” pieces
  • 1/2 cup mint leaves
  • 1/2 cup labne
  • 1/2 cup Lime Leaf Vinaigrette
  • -
  • Blend ingredients in a blender until smooth
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 1/4 cup honey
  • 1/2 tsp fine sea salt
  • 1 ½ tsp crushed Market Lime Leaf or 12 whole dried leaves (stems removed)
  • 1/4 cup Curcumade blend

Directions

  1. On a platter, smear the labne to cover.
  2. Layer on the watermelon, cucumber, and mint leaves.
  3. Drizzle with Lime Leaf Vinaigrette and a pinch of salt as needed.
