Watermelon, Cucumber and Mint Salad with Lime Leaf Vinaigrette

Ingredients
- 4 cups watermelon, diced 1”
- 2 Persian cucumbers, split and cut into 1” pieces
- 1/2 cup mint leaves
- 1/2 cup labne
- 1/2 cup Lime Leaf Vinaigrette
- -
- Blend ingredients in a blender until smooth
- 1/4 cup lime juice
- 1/4 cup olive oil
- 1/4 cup honey
- 1/2 tsp fine sea salt
- 1 ½ tsp crushed Market Lime Leaf or 12 whole dried leaves (stems removed)
- 1/4 cup Curcumade blend
Directions
- On a platter, smear the labne to cover.
- Layer on the watermelon, cucumber, and mint leaves.
- Drizzle with Lime Leaf Vinaigrette and a pinch of salt as needed.
