Add a few slices of paper thin jalapeño to finish the salad if you like the extra kick.
Watermelon, Cucumber and Mint Salad with Lime Leaf Vinaigrette

Ingredients

4 cups watermelon, diced 1”

2 Persian cucumbers, split and cut into 1” pieces

1/2 cup mint leaves

1/2 cup labne
-
1/2 cup Lime Leaf Vinaigrette

Makrut Lime Leaf Vinaigrette
-
Blend ingredients in a blender until smooth
-
1/4 cup lime juice
-
1/4 cup olive oil
-
1/4 cup honey
-
1/2 tsp fine sea salt
-
1 ½ tsp crushed Market Lime Leaf or 12 whole dried leaves (stems removed)

1/4 cup Curcumade blend
Directions
On a platter, smear the labne to cover.
Layer on the watermelon, cucumber, and mint leaves.
Drizzle with Lime Leaf Vinaigrette and a pinch of salt as needed.
