During grilling season, the zucchini can be cooked on the barbie and can easily be made in the oven.
Ingredients
2 medium zucchinis, cleaned and sliced ½”

Olive oil for grilling
-
Salt to taste
-
Pepper to taste
¾ cup Green Olive Saffron Gremolata
Directions
For the grill
Preheat the grill to high heat.
On a tray or flat plate, drizzle the zucchini slices with oil, salt, and pepper to taste, tossing to coat and season well.
On the hot grill, grill zucchini until just tender.
Remove to a clean platter and garnish with green olive saffron gremolata.
For the oven
Preheat the oven to 400°F.
Roast until just barely tender.
Remove the cooked slices to a platter and garnish with green saffron olive gremolata.

Recipe Notes
The Green Olive Saffron Gremolata is better when made in advance, so the spices have time to hydrate and bloom.
Variations and Ideas
The zucchini can be substituted with broccoli rabe, golden potatoes, or your favorite grilled or roasted vegetables.
Usage Ideas
The grilled zucchini and gremolata make a great crostino on grilled bread or a pita bread sandwich with a big handful of fresh arugula.
