Zucchini with Green Olive Gremolata
During grilling season, the zucchini can be cooked on the barbie and can easily be made in the oven.

Ingredients
- 2 medium zucchinis, cleaned and sliced ½”
- Olive oil for grilling
- Salt to taste
- Pepper to taste
- ¾ cup Green Olive Saffron Gremolata
Directions
- Preheat the grill to high heat.
- On a tray or flat plate, drizzle the zucchini slices with oil, salt, and pepper to taste, tossing to coat and season well.
- On the hot grill, grill zucchini until just tender.
- Remove to a clean platter and garnish with green olive saffron gremolata.
- Preheat the oven to 400°F.
- Roast until just barely tender.
- Remove the cooked slices to a platter and garnish with green saffron olive gremolata.
