Another dish I discovered when I moved to the US in 2002 was a grilled cheese sandwich. I still am not sure about the name since there is no grill involved and the cheese is between bread and not actually grilled. All this aside, who does not love crunchy hot bread with melted cheese inside. This preparation is a great way to use up any leftovers, or just create a quick meal on the fly.
Luberon Grilled Cheese

Ingredients
-
1/2 pound cooked short rib, sliced (optional but great)

8 slices of mozzarella cheese
-
Mustard
-
8 slices of tomato
-
Luberon N4
-
Olive oil
-
8 slices of bread (I used sesame sourdough)
Directions
Lay the bread slices on a board and coat one side with mustard. Top half the slices with equal amounts of short rib, mozzarella and tomato. Season with some Luberon and make sandwiches by placing the other bread on top.
Heat some olive oil in a pan (cast iron is great) . Place the sandwiches in the pan and cover with a lid. This is not a classic move but I find that some "steaming" actually soften the bread at first and speeds the meat warming and cheese melting. Do not worry, the crust and golden color will happen.
Cook for about 3-4 minutes on each side while pressing on the sandwiches every once in a while with a spatula.
Look out for a golden brown color on both sides and melted cheese. Enjoy.

Variations & Ideas
• Replace the short ribs with pastrami or brisket and use any type of cheese you like.
• Replace the mustard with tomato sauce, add cheese and pepperoni for a "pizza" grilled cheese.
