Marinated fruit with whipped is a crowd pleasing, seasonal treat. I love fresh cherries and great quality frozen cherries (or jarred cherries amarenna) can always be at the ready for a quick sweet treat. The recipe below works really well for any seasonal fruit – strawberries, blueberries, peaches, and pineapple to name just a few.
Whipped cream seems to be a strangely intimidating technique – often accompanied by questions and anxiety about the whipping along with dread of labor-intensive struggle and complete lack of seasoning. I promise, whipped cream is simple and straight forward. A little sugar and a pinch of salt along with the right tools for the job will change your life. And by the way, any leftovers can be refrigerated and given a little reviving whip the next day if needed. Adding the pinch of salt to whipped cream enhances the sweet and creamy flavors.
Whipped Cream with Marinated Cherries

Ingredients
- 1 cup pitted cherry

¼ tsp Oz
- ½ heavy cream
- 1 tsp sugar

1/8 tsp fine sea salt (about a pinch)
Directions
- Toss the cherries and Oz together to combine. This can be done up to 3 days in advance and stored in the refrigerator.
- Whip the cream with the sugar and salt to medium peak. If whipping by hand, use a 1-2 qt mixing bowl and medium sized whisk – the whipping should take about 2 minutes.
Divide marinated cherries and whipped cream between 2 small bowls. Sprinkle a little more Oz on top of the whipped cream and enjoy!

The key to making this simple dessert/snack special is to give a little dusting of a good spice pairing to enhance the fruit’s natural qualities and to have whipped cream to top it all off.
