Sri Lanka N.14
On an island situated off the coast of India, there are fields of cinnamon as far as the eye can see. This is Sri Lanka, where almost 90% of the worlds cinnamon has been produced and exported for hundreds of years. This level of production has allowed cinnamon to make its mark on many of the worlds cuisines.
In the Middle East and Persia, it is used to add robust and deeply warm flavors to savory dishes like lamb and soup. It is also incorporated into warm beverages in a way that feels nourishing. It has a way of balancing sweet and savory flavors unlike any other spice.
Sri Lanka N.14 was created as a nod to the powers of cinnamon and the balancing powers of Chinese five-spice powder. Star anise plays off of soft-stick cinnamon's sweet notes in a way that acts as a yin and yang for savory cuisine.
This blend encourages people to experience a softer, more floral cinnamon that differs from the hard-bark variety they're used to.
Recipe Ideas
- Toss sliced apples with Sri Lanka and brown sugar to use as apple pie filling
- Mix with confectioners' sugar and sprinkle on donuts or waffles
- Season thinly sliced duck breast with Sri Lanka then sauté in a hot skillet with red onions and bell peppers
